How altitude changes the taste of wine

Insights from a private jet tasting

UK sommeliers blind-tasted the same wines in London and aboard a private jet to Nice, recording detailed technical notes in both settings.

With brand influence removed, sensory change was the only variable. The results revealed striking differences at altitude, often making certain wines even more appealing than on the ground.

Champagne

Bubbles dissipate faster in low cabin pressure and acidity becomes more prominent. Aroma and flavour are muted, while oak-derived complexity and vinous depth integrate better.

Best in flight
Champagnes with high pressure, generous reserve wine, extended lees ageing and some barrel maturation.

White wines

Acidity is heightened, perceived sweetness drops and aromatic intensity decreases as pressure changes affect the nasal passages. Well-integrated oak complexity is accentuated.

Best in flight
Bold, aromatic varieties such as Viognier, Marsanne, Roussanne and Gewürztraminer from warmer vintages, with layered complexity and at least 18–24 months of age. Avoid very young, mineral-driven whites.

Red wines

Acidity and tannins are both heightened at altitude, which can unbalance young or highly tannic wines.

Best in flight
Harmonious fruit, acid and tannin, moderate age and integrated oak, without being overly mature.

The experiment reinforces that wine for air travel should prioritise balance, aromatic generosity and textural integration over delicacy or austerity.
